bacon wrapped, pineapple & mozzarella stuffed onion rings

Take a pineapple ring. put a raw ring of onion on top, stuff the inside of the onion with mozzarella, wrap the whole thing in bacon.

if that sounds like a major pain in the ass.... its because it IS A MAJOR F'IN PAIN IN THE ASS.

The recipe comes from Harry Soo and I decided to try it last night.

I planned to make 10, and I had all the required ingredients. However after the first 5 - I gave up.

They cooked in about 40 minutes and when they were done I was hoping and praying that these things would totally suck.
If they sucked, I knew I'd never have to make them again.
But no. They were incredible. Every bite was like a deliciously condensed hawaiian pizza.


Not pictured, but on the menu:
- a few pounds of bulgogi korean bbq
- a few pounds of mixed color fingerling potatos
- two french foiled onions
- a beatiful tritip smoked over red oak and onions
- banana boat s'mores

Would it help to buy the mozzarella in a round shape about the same diameter as the onion/pineapple rings?  Then you could just slice it, cut a hole in the middle, and stack it between the pineapple and onion ring?

it might. i used string cheese
i think it might help to use fresh pineapple instead of canned, and make the hole bigger than normal

Dude I gave up making those a few weeks ago...they were the biggest pain in the ass to make and I was in no mood that day. Hope they tasted great.

I saw these on harry's website.  Looks good Troy.

I am going to harry's class on 8/23.  The GF got it for me as a b-day gift.  Really looking forward to it.   ;D

Very nice! I make a similar version but cut the pineapple into chunks, then only half-cook the bacon so its soft and pliable. I use about a half piece of bacon, wrap the chunk and skewer with a toothpick then finish back on the grill!

Canned pineapple also makes this a cinch in a pinch!

Why not just wrap the bacon around the whole thing rather than trying to thread it through the hole every time. I mean, you can't eat the hole anyway!  :o It might not look as pretty but it would save a hole bunch of time. See what I did there?  ::) Rimshot!

Seriously, you'd just end up with a bacon covered hockey puck looking thingy, but it would be a surprise when people took the first bite.

i don't know if that'd hold the melty mozzarella in. the bacon takes 40 minutes to crisp up.
Plus when its done the bacon is a nice crispy shell, the whole thing is like a donut.
