Got my grill, first cook!!!

Let me start off by saying I have never used a charcoal grill before. So anyway it arrived this morning. A weber one touch gold. I assembled it in about 10 minutes. I have it a good bath to wash away any oils or other stuff. Afterwards I immediately got my chimney going so I could season this thing up and just play with. Hit some different temps and then shut it down.

I decided I wanted to cook on it tonight. I was going to wait till tomorrow when I had more time. I got the grill going, put a drip pan in with some water in it, and put the coals all to one side. I spatchcocked a chicken, a little evoo, threw some McCormick sweet and smoky rub on it, and piece of apple wood for some smoke.

Took longer then expected, about an hour and a half. Will use more coals next time. For my first time I will say that I did a pretty damn good job. Wife was very happy with it. Only one piece of breast meat left between the two of us.

Things that I will change the next time. Use more coals, get some seasoning under the skin, and take out all the rib bones.

Looks good - I don't think my first cook went that well on a kettle!

Nice work!  I think you picked a good meat to start with. The last few times I did spatchcock chicken I seasoned it under the skin. It makes a big difference.

I did nothing but research online since I ordered it. I was reading everything possible. Gotta find some good rubs or make my own. Think I am going to do a pork loin on Friday.

How do you suggest I cook the tenderloin?

Is it tenderloin or whole loin?

tenderloin you can just grill with a tad of smoke thrown in, end @ about 140 to rise to 145 at rest....
35 to 45 minutes, maybe......

the whole loin is what the brine would be used for.....like said, if you have 2 or 3 days, it's an easy thing to do to add moisture & flavor......

Temps for me are 275 approx.; length of cook depends on how big it is....ending temp about the same as the smaller piece or slightly higher.....

Justa quick roasting gets them nice, just don't go too, too long as they can dry out....

PS: 275 at the grate level is a good medium heat to use, maybe set over the coals  a short part of the time to get some char & crust on it if you'd like......
