Snake - First attempt
« on: May 27, 2014, 10:52:26 AM »
I had a rack of baby backs calling out to me this weekend and I thought, "what to do, what to do..."
SNAKE!  I had never tried it so why not?

I uncovered the tried and true Performer and built a short snake.  Turns out, this was the perfect length for the cook.  I went 2-1-1 with some homemade rub.  Next time I'm going to back off on the apple wood a little.  I had a couple of "used" coals from the previous cook and so that's the lone grey briq on the left side of the snake.

Came out pretty nice!  I was absolutely surprised at how the kettle just stuck at 225-250 with ZERO effort.  Bottom vents and top vent fully open to start and then mid cook, I closed bottom vents about half way but really, if I didn't do anything, I think that would have been fine too.  Too freakin' easy!
The crack in the bark was not expected.  They went in to the foil fine but came out with a crack.  Maybe someone here knows why.  Definitely happened while wrapped.

Over the top smoke ring!  They taste great but I think two or even one chunk of wood would have sufficed.

Very happy with the results.  A WSM would be nice but I think a kettle works pretty good for a small cook.

Very nice cook. I like the smoke ring on the ribs. 4 hour cook for a small amount of charcoal.
