First Fattie

First time doing a bacon weave and a burger Fattie, I've been looking forward to trying this for awhile.
Ready to go... I added a few shakes of Yardbird rub to top before I put it on.

An hour in... Taking on some nice color.

Ready to come off...

A light smoke ring, I only put one chunk of Apple wood on.
Tasted great!
Thanks for the advice, the higher cooking temp was needed.

If you want to tighten up your bacon weave and not have to use toothpicks, try rolling it in plastic wrap.  You can pinch the ends and twirl them until it's as tight as you like.  I think I used two layers for the one in the pic.  I tucked the ends underneath so they wouldn't unwind when I put it in the fridge overnight.  I also do this with the fattie before the bacon weave...it seals up both ends well to prevent leakage of any innards.   The dollar bill was for scale so a friend could tell how big it was.  This one was 1.5lbs of ground beef stuffed with colby jack cheese...I was going for a bacon cheeseburger.

Tried my first one this weekend.

Lasted five minutes after I pulled it off.

Forgot the cheese. Spiced potatoes, Italian sausage and bacon weave. It was great. I think it could have been pulled a little sooner - next time. And yes, there will be a next time.

I just smoked my first fatty yesterday. I filled it with scrambled eggs green onions yellow onions and cheese and some steak seasoning. Damned if I forgot to do pictures of it completed and on the grill so I have no proof... :(

Congrats to all of you "first timers" on the fatty.  I think it is one of the most enjoyable (and tastiest) cooks on a kettle or smoker.

toddmog's tip is solid; if you can wait overnight, having the fatty (or the fatty filling) wrapped tightly in plastic and chilled is the way to perfect looking fatties.

I'm now very hungry....
