Salmon Filets and Skins on the Summit Griddle

As my previous thread stated, we switch back and forth between cod and salmon mostly.... Got these at Costco - skin on and individually wrapped just like the cod.  I thawed these and took the skin off with my brisket / prime rib slicing knife (highly recommend) so I could crisp up some skins for Beaux.  Turned out really good, just used avocado oil and Red Lobster seasoning on the filets, no seasoning on the skins.  Kellee finished up the skins in the air fryer to get some added crispiness which Beaux appreciates.  Also sneaking in Wednesday night's dinner - veggie plates with mexican cornbread cooked on the recteq.  We are loving summertime dinners.

Both plates look very tasty - but I would probably lick the plate on the veggie dinner. ;D

As delicious as all the grilled meats are, you just can't beat a nice vegetable plate with cornbread
for dinner after a hot summer day.

Truth!  The veggie plate was my favorite of the two thanks to garden tomatoes, peppers and a slice of vidalia onion.  The cornbread was a winner as well - so many ingredients.  Flour, corn meal, cheddar cheese, creamed corn, diced vidalia onion, diced jalapeno, buttermilk, butter salt and sugar - basically it's own food group!

Yes indeed, both plates are winners !  I really like the idea of pulling of the skins.  I know some people enjoy them, I do not, although, when I had dogs they, like Beaux, really did.
