Summit Griddle Cod Filets

Seared on the KJ griddle accessory with avocado oil, butter and Red Lobster seasoning.  Got these filets at Costco and I highly recommend them!  They come frozen and individually wrapped - perfect for us empty nesters.  Roasted a couple of yard birds on the Recteq for Beaux's meal prep and always nice to have the Ranch present even if just to look at.  Gotta cook on it soon - possibly a brisket this weekend, we'll see.

Looks like a nice cook.  Might just have to try that cod.  It'd be a nice change from their salmon or tilapia.

A brisket sound nice too, although with what they cost these days, it's almost cost prohibitive.  :(

Oh, and Beaux looks comfortable, haha.

The Cod is a nice mild fish that we really like.  We usually go back and forth between cod and salmon.  Kellee won't touch tilapia (bottom feeder) or catfish so we stick with roughy or cod.

I'll have to check out brisket prices, haven't done one since Thanksgiving.  I do have two tri tips in the freezer that really should be cooked first since they're from last year. 

And yep, that's Beaux's couch.  He lets us sit with him sometimes as long as we hug on him.  ;)

The cod looks very nice but the chicken looks wonderful - no wonder Beaux is keeping a close eye on it!

I agree, the Ranch is some nice eye candy but the best view, of course, is in the last pic.  :)

Thanks Brenda!  I had no idea when I bought that Recteq RT-1250 last year that I would use it so much - mainly for Beaux's chicken since he can't take too much smoke from wood or charcoal.  I can probably spatchcock and tear apart a chicken with my eyes closed now lol.  I was doing rotisserie on the genesis gasser, but this is so much easier.  Butter under the breast and thigh skin, olive oil spray and poultry seasoning on the outside makes a really pretty bird - and tasty!  Sometimes we get some too.... ;)

I do as well.  There's an Irish Pub in St. Augustine, though, that we (me and my daughter and S-i-L) go to about 3-4 times a year.  That when I get my fix . . .
