@jebivswife and I are staying for a short weekend at SGI in Florida,  check out the grill that's at the house we are staying at, is that cool or what ?

Now THAT's what I'm talking about!  Nice sized filets there.  Did you do indirect on parchment for the entire cook?  I've never tried that with any type of fish.  Also interested in your choice of seasoning....  Two weeks from Sunday cannot come soon enough for us over here...

Indirect for the whole cook on parchment paper, no stick, stays moist and easy clean up on the grill, blackened seasoning on both sides, nice thing about the parchment paper is you can move the fish easily if you wanted to get it closer to the fire or even go direct to finish.

Thanks for the details, I'll have to try it some time soon.... Going to get mine from Lynn's in Eastpoint this time I think.  In June we bought from one of the trailers on the island and were disappointed with the fish and shrimp quality.
