Early December Ribs

Weekend started out about as usual - “I sure would like to grill or smoke something this weekend....” Friday night weekly date to Publix, looked at the meat selection and apparently they have lost all sense of reason.  Single slabs of ribs @$22 each.  Roasts and steaks equally unreasonable.  Tired of poultry, I told Kellee “Costco tomorrow.”  So on Saturday we go to Costco, get a 3 pack of loin back ribs for $28, two roasts, 5 lbs of 80/20 and a Food Saver vacuum pack set with extra bag package.  Savings on the meat will go toward the Food Saver and will pay for itself in no time.

Fired up the WSM today and made probably the best ribs I’ve ever made.  Nice low key day, football on the tube, ribs on the smoker.  Enjoyed some amazing homemade vinegar pepper sauce on our black eyes too courtesy of my awesome wife.  Also enjoyed some good convo with some awesome grill fellas here over the weekend.

That's good southern eating when you make homemade pepper vinegar and put it on your black eye peas and greens. 

Congrats on the vacuum sealer, it's a must for buying in bulk.

Thanks guys....two hours wrapped in foil with real butter pats and brown sugar is my fav.  Sauced and 30 mins uncovered finished them off perfectly.  Most would call these overdone, but I wanted a homemade McRib sandwich using the leftovers.  Bones pulled right out.
