4th of July trail and error

Decided to try my first Bacon Bomb a long with my 4th of July burgers.

Started by slicing up my home grown jalapeņos.



Mixed them in with cream cheese and shredded mozzarella.



Made a cheese log with the mixture.



Took my favorite sausage (conecuh sausage from Conecuh Co. Al) and smashed it inside a ziplock bag with a rubber mallet and rolling pin.





Placed the cheese log in the flaunted sauce sausage and rolled.



I then weaved my bacon.



Placed the cheese roll rolled in sausage on the bacon weave then rolled.



Then prepared the burgers.





Refrigerated burgers while prepared my smoker and started bacon bomb.



I let it smoke until it reached 155 degrees internal temp.  Then basted with homemade BBQ sauce.



After it reached 160 I took it off and let rest. Meanwhile I started burgers.



After resting I sliced the back bomb while burgers cooked.





Pulled the burgers off and served a happy bunch of hungry people.

Nice!  A fatty will be on deck. Maybe next weekend. Need to let the arteries recover a bit.
