Big Day Tomorrow!

After cooking/smoking on the kettle for a few years now I figured it was time to take it a step further, so I ended up entering a local backyard BBQ competition, and tomorrow is the big day! They have a chicken and pork rigs category and I will be cooking in both. I'm beyond pumped! Anyone else compete with their BBQ?

I'm much better at ribs. They are a little more forgiving then chicken IMO. I'm using thighs though, and are going to brine them prior to putting them on the grill.

I have competed. Don't do it any more though.
Got two calls in my first comp (6th in pork and 5th in Brisket). Got a brisket call in every comp but one, and it was the only comp we didn't get a call. Even won brisket at one comp. Talk about a surprise! I was pretty consistent with my ribs, too. I go way outside of the box with my chicken so less success there.

Best of luck on your first time out. Trust me, if you do get a call you will do another comp because there's nothing better than hearing the name of your team at awards.

I took 3rd overall in pork ribs. Unfortunately I did not get a picture of the end result, I was too busy prepping my box. This was supposed to be an amateur competition, but a pro team ended up showing up. Our ribs beat the pro team, I'm happy about that!

I botched the chicken, as it looks dry. I should have added a thin layer of BBQ sauce at the end to make them look juicy. Oh well, they were delicious anyway!
