What do you cook on the lower grate?

1) I cook the same thing as up top, it's all about capacity, baby!

2) I cook something else down below, it's all about variety, baby!

3) I don't often cook on the lower grate, and carry the burden of my shame.


Does your answer depend on the size of WSM, and if so, how?
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Option 3 so far. Haven't had mine long. Still kinda figuring her out.

I have had my WSM for several years and rarely cook on the bottom grate. I am not against it or anything I just rarely need more room then the top rack. I am running a WSM 18.

I smoked two 7.5 Boston butts today
  The bottom rack ran 15- 20 degrees hotter
So that butt was done first which was a high pain
In the A-s to get to to take it off. I'm running a 22 so I could of put them both
On the top rack . Next time I will if I need more
Room I will break out its other twin brother.

Usually choice 1, sometimes choice 2, almost never choice 3.

I have only cooked on 18.5" WSMs.
I've got Webers. 10 - WSMs, 5 - 22.5" kettles, 2 - 18.5" kettle, 2 - SJS, 2 - SJP, 4 - WGA, 1 vintage Coolie Pan

Option 3. I have only used my bottom rack twice. I usually cook for just 2, my kids are picky. When I have used the bottom rack, it was the same thing. Cooked a little faster. I am using a 22

Most of the time, I go with #2.

I have cooked up to eight Boston Butts on one of my WSMs at one time.  It was for a Charity Bike Ride/Event.  It was nice to be able to fit all of that on and just have one smoker to watch.

Routinely, I cook four racks of ribs, two on top, two on bottom.

I just fired mine off last night with two butts on the bottom rack.
Then I'll put three racks of baby backs on the top around noon.

I usually run just the top grate, but with this cook I'll just be able to put the ribs on and not have to mess with the butts until it's time to pull them off.

Depends. Smaller cooks......it's usually empty. I've also had 30lbs of pork should down there at one point when doing a large cook. Also, on more than a few occasions, I end up with a pan of baked beans down there (ala Bucky) for a good batch of drip beans.

The top is more convenient if turning is necessary in my experience.

I cook ribs on all 3 racks.

Have been thinking about doing that for a long time, @bear.  What did you use for the middle rack supports?
