Slow N' Sear Maiden Voyage

Doing a pork butt on the new gadget purchased this week. Ready to fire this thing up!

Got my butt seasoned and ready to go!

I also bought a M vortex. Can't wait to break it in with some wings!

any problems controlling the temp?  Mine should be here today.  Suppose I should go to the store!

Somewhat and kinda surprised by it. I've been running the temps between 215 and 250 but averaging around 225. I got up a few times because the temp keeps going out of range both high and low and having to readjust the dampers. With that said, it is quite windy here today and the temperature outside is about 45 degrees. I'm not sure if those conditions reeking havoc on my cook?

Sounds like a combination of the wind, temp, and just need a cook or two to figure it out.  The cold wind can really draw some heat off of the kettle.

Very nice color!  The temp fluctuations are definitely because of the wind.  Bernoulli effect from wind can draw air out more quickly than it would on a calm day.  That's just physics.  ;)
