Gameday Breakfast Fatty of Champions!

I'd like to dedicate this post to none other than Mr Blair Walsh of the Minnesota Vikings... This man is a hero ;D ;) ;D (In reality feel pretty bad for the guy!... almost...)

So this is my first go at a breaky fatty and definitely NOT the last!

Here's the quick run-down:

Fill was made up of Crimini Mushrooms, Fresh Garlic, Chopped Red and Orange Peppers, Chopped Onion and a healthy amount of Butter simmered down for awhile until lightly browned. Then the casing was made of 1 part Johnsonville Hot Sausage, 1.5 parts fresh ground pork, and seasoned with Simply Marvelous Sweet Seduction. This was covered with a bunch of texmex shredded cheese, scrambled eggs, hash browns, and a pinch or two of smoked sea salt. That's about it other than a heavy baste of Sweet Baby Ray's about 30min from finishing... oh and a wine barrel chunk in the basement!

The Pineapple Rings where the kickoff snacks while the fatty finished up - amazingly easy and good eats 8)

Awesome cook!  I've never thought of wrapping bacon around pineapple.  Really wishing I had a pineapple right now!

Looks great ! I almost got a woody when I saw the pineapple with bacon. Consider that idea officially stolen :) Sorry about your Vikings :(

Wrap pineapple chunks in bacon. Cook till the bacon is almost done. Make a glaze of brown sugar and katsup. Glaze the bacon candies. Now wait. This is the hard part, but they are roughly 4000° at this point.

That is a serious fattie though. But, is there a bad fattie?
