Xmas Prime Rib Dinner

We are traveling tomorrow and Friday so tonight was my only kick at Xmas dinner. I am on the front porch as it was due to rain:



Started with a 5 pound prime rib that I injected with some salted beef stock. It went in a ziplock bag with the extra juices for 3 hours in the fridge. I removed it and patted the beef dry with paper towels and placed the roast on a rack and back in the fridge for 2 hours to dry. Then rubbed it with a combo of Montreal Steak spice, onion powder, garlic powder and chili powder and rested for another hour:

I sear the meat first:



Then transfer to a kettle set up for low and slow. I smoked the roast at about 210f for 3 hours or so with a combo of pecan and bourbon barrel chunks. Done at 132f internal:



While the roast is resting I fire up a couple chimneys to do sides:
