Pastrami and Latkes

First time scratch pastrami following Amazing Rib’s close to Katz recipe.  Lots of fun working through the wet brine and seasoning process.

13lbs full packer trimmed, 11 hours at 250 on the 26 with nice results. Will definitely be doing it again.

Thanks folks, the amazing rib recipe stated that once you have had home-cured corned beef, you’ll have a hard time going back to store bought. I think they’re right.
