Just got the Performer Deluxe after 30 years of using propane/ natural gas. Pretty much never used coals, and having a few challenges in making sure i use the right amount, but when I did get it right.. the rib eye was spectacular. Looking forward to some good info on this forum.

Lots of folks here who can provide guidance on charcoal usage - I used to use a full chimney for every cook (no matter what I was cooking) until I saw others use much less and get better results.
