Brisket Flat cook

Brisket flat. Found a few, back in March at Costco, for $0.49.lb.  I did not question the prices, and snagged a few. Flats, IMHO are harder to cook, because they're not as tender as whole packers, or points.  This one is 6 lbs. Put it on at 7:00 am, took it off at 4:30, wrapped and rested for a couple of hours in a cooler.

That turned out pretty dang nice....flats are hard to work with, but you did just fine!!!

I was wondering if Costco's sold only flats? Now I know! And $0.49 lb?! I would have bought all of them.

I am heading down this week to Costco in Roseville to get a prime packer brisket (I'd really prefer a few flats).

Lightly smoked, wrapped in paper and perfectly rendered, its some of the best taco meat ever!

It vacuum seals incredibly well too!

The Costco's around here, (Baltimore Metro area), seem to only sell flats, and the occasional packer, but I seldom see those.    I think I ended up buying four of them.  The others were too small.
