Pork Spares w. South Carolina Mustard Sauce

Even though yesterday was a bit "rough" managing a sick toddler, I still found time to crank out some pork ribs on the 26 with Mike Mills S. Carolina sauce recipe. Smoke ring was a little more pronounced this time. Enjoy.

I gotta say they don't looks as pleasing to the eye as a regular sauce, but I'd LOVE to try it. Those flavor combo's sound really good to me. Of course, I'm a mustard guy.

Yeah, I agree about the visual appeal. I have done ribs with the mustard sauce before, but these turned out better. After the sticky sweet ribs I did for July 4th,  my wife requested something a little different. Mustard seems to be a polarizing ingredient. Some people love it, some don't. This one is a winner.

Oh...and little man is better today. Juice boxes and honey helped. Taking him to the dr. in a few hours.

Mustard and brown sugar is always a winner.  A little heat can't hurt either.

Glad to hear that the young'n is feeling better. 

I've never tried the SC sauce even though I'm less that 10 miles from the border.  What you've got there looks pretty d@mn good, so I'm going to have to give it a try.

Thanks! No...mustard sauce was added during the last 30-45 min of the cook.

It was initially dry rubbed and sprayed each hour with a combination of mostly apple juice, some vinegar, and a touch of Worcestershire.

Have to say...your ribs look great too!  Looks like the sauce was on from the start? I am going to have to try THAT next time! Wow!

Sauce from start yes, I need to try spaying next I make ribs. I had a little pineapple juice in a pan for moisture.
