Big thank you to ramsfan for the vintage 18" roti and Chiku18 for the kettle. This is my first time using this accessory/kettle combination.
I made a compound butter of salt, pepper, garlic and rosemary and rubbed under the chicken skin, trussed, and let it spin over Western lump for about an hour and a half uncovered. Served with mushroom risotto and broccoli.

Yes, that's correct. This setup was a little different from my usual indirect-covered cook. This time I placed the lump directly underneath the bird and cooked completely open.
