Necessary Stats:
Name: Glen
Location: Washington DC
Employment: USMC
Grills: Copper Smokey Joe(waiting for delivery), Traeger made Smith & Wesson 22mag unused.

Well I have finally purchased my own and first Weber charcoal grill.  My father is a gas man but Weber has always been the brand of choice. 
In high-school I worked at an Ace Hardware which sold Weber grills.  I could assemble a Genesis in under 20 minutes but the performers always took a few extra minutes. I use it be able to spout off specs and info on the whole Weber lineup. Unfortunately that knowledge is gone now.

I have always had a love/desire for Weber grills. Over the years if anyone buying a grill asked me,I'd direct them to Weber. As a group my friends and I bought  our buddy his first Weber, a Smokey Joe Gold for his birthday (7 years ago)
Well today I bought my first Weber. It's a Copper colored Smokey Joe. I found it on Ebay for a little under retail NIB. Hopefully it comes as described. Description states it has the locking carry handle.

I plan to add the SJS vent mod and enjoy it as much as possible whenever the weather allows.

I plan to enjoy this little guy camping as well as at the barracks instead of using the brutish community grill.

I look forward to reading and learning hear as I learn in the real world once my grill is delivered.

Thank for the support y'all.

Just to keep my thoughts in order as well as recieve any input/advice. I'm thinking of using the 18 1/2 silver one touch vent system in my Joe, instead of the Joe silver vent.

I found a page with a gentleman who did this mod and I see a 2 for one with it. Ease of adjustment and added airflow.

It's all about portability over here so this chair and wee little cooler will have to do.

Update on my grill, it shipped today! FedEx is the carrier and tracking says  delivery by the 29th. Fingers crossed!

Well my grill was delivered today. Unfortunately it's a Copper silver model and not a premium like the ad stated. Still less than retail and I'll only be a few dollars over retail once I add the lid lock.  I ordered the lid lock and support from Weber right away and they will ship out tomorrow.

I want to start with a basic grill cookout so maybe a steak and some eggplant and asparagus, maybe add some potatoes. We will see.

European models are gold models called premiums sold in colors. Was hoping the seller somehow had a European model.

Not the end of the world. Either way I was going to morph my Joe into a combo.

Too hot for the screwdriver handle, removed it for the rest of the cook.  I added an extension later.

Steak was cooked to medium which is too far me but I'll work on it, medium rare lover here. Potatoes didn't cook all the way. I need to add them sooner and let them cook for a lot longer. Steak and asparagus cooked well together. I left half an onion on the grill to give a little onion flavor.

Next time I'll find the hot spot sooner, sear the steak for 10 sec each side then put on the cool side to finish cooking.

I added the extension using a repurposed cocktail spoon. All set for now I hope.

looking good, just need to get the sear down.  A friend of mine loves onion on the grill.  I can't remember exactly but I think he wraps them up foil but puts butter and worcestershire in.  Haven't tried it but yet but been meaning to.

@eLLWOODgGLEN- The lack of grill marks on your meat could be due to not heating your grill prior to cooking. When your coals are hot and you dump them in the kettle, do you immediately put your meat on the cooking grate? If so, next time dump your coals, put your cooking grate and lid on and let them heat up for 10 minutes prior to putting your meat on.

Thanks for the tip.

Coals were in for 10 minutes but I was also too eager to cook.  I didn't find a true hot spot to sear properly due to wind and vent placement. Next time I'll stack the charcoal better and find a true hot spot.

Not that I'm aware of. I'll be making one myself either from scratch or with repurposed materials. Eventually.


In other news, I ordered the 2 piece cast iron grate. Looking forward to having that to help with making Joe 100% self contained ready for transport.

Maybe one or two of the older charcoal "fences" could fit/work ???   Some of us use firebricks to coral the coals from time to time :)

Well I ordered the lid support and lock hardware as well as the bolt kit; they came in today but, I found something.

This has been tucked into a corner closet of my Barracks for 3 years. I saw it when I first got there and forgot about it until I stumbled onto it today.

Abandoned with bent legs and lid lock bar and also missing both vents; I have adopted this poor Weber. I should have taken a before  picture but, it was rough and dirty. Straightened the legs and the lid lock, added my new vents, and lid support and he is looking good.

Now it don't think I need to drill into my Copper kettle bottom to add the carry handle.

Decisions...decisions...

Some chips in the finish and the wheel rings are brittle and falling off the wheels. I plan to make a one touch gold stuby for table grilling to match with my Joe's. I have 3 kettles already. Weberitis is kicking in.

I've been hangering for a midget. Cut the legs down and altered the triangle to work with the shorter legs.

The one touch system was junk. The blades were cracked and the system rusted solid. I need to order the vent system and grates and leg cap. I'm also going to add the gold ash can to make transportation cleaner.

As for the Weberitis, I need a red head or a yellow kettle... Some day I guess.

Cleaned up my Performer today, disassembled everything I could (1 touch is rusted but works) cleaned up everything.

Axle took the most work with my drill and some files then wet sand and then polished with a silicon sealing polish.

Today I picked up a nice side burner for a side project.  All thanks to 56MPG for making it happen.

The burner is in great chape and only needed a good dusting to look perfect for my intended project.

Looking good Glen. Tank could go to the outboard side on the right like the Genesis. It's starting to look look like a model Weber should have made back in the day. Must be 20 or 30 of us that have had the same idea, glad someone is finally making it happen. Another Mod-Month entry in the works!

Ordered the grate for my Outrider and I got carried away ordering the OTG system for my 18 midget as well so tomorrow Weber is shipping to me my grate, one-touch cleaning system and ash catcher assembly.

woohoo

once I get the grate I will do my first cook on my new old Outrider but for tomorrow I'll be using my new to me go anywhere.

Maiden voyage with the GA today and boy it was good. Set up an indirect cook, beans in the basement and cooked a full rack of pork ribs.

Coals on the left, foil covering left grate, ribs on the right, lower vents opened on left & closed on right, left upper vent open, 5 coals in chimney lit with 10ish unlit (added 5 mid cook)

rotated ribs I think 5 times at approx. 45 min, total cook of 3hrs with a quick cook of 10min after lathering with Famous Dave's Sauce, 1/3 was kept basic with dry rub.

Absolutely delicious and juicy with a slight smoke ring coloring (too good to take pics), buddy of mine worked at a rib shack and enjoyed them. Looking forward to more cooks on this thing.

Honestly both were great, just the rub had great flavor but the sauce added to the whole thing.

Got the parts to finish my 18 OTG midget. Also have the grate for my SJP and picked up a freebie today!

Wife isn't amused, but it's mainly a sport to give me a hard time for my eclectic  collections.  She loves that I have so much passion for so many things.

I now have a Q120! It needs some cleaning and it'll likely live at my Mother Inlaw's until she gets a real gasser.

Cooked on the Outrider today. London broil with asparagus and squash. Meal turned out good, I used a charcoal basket with all vents open.

Seasoned the meat with olive oil, salt, pepper, paprika, chili powder, garlic powder and dried oregano.

Squash seasoned by my buddy with some McCormick choice and asparagus with olive oil, salt and pepper.

I like this grill and the size it brings to the table.  My 18 OTG midget will likely live at my buddies house cause he is thinking of getting a kettle.  We will see how he likes this one. Rollercoaster of a weekend...

1st @Neil_VT00  brings to my attention a 22" copper kettle... unfortunately it sold before I got to it. (one dang night I don't do my ritual weber search in my local area!)

It was a disheartening blow, but.... the upside.... Now I am in line for a Weber Chill. Should be picking up Monday.

Seller states it works which is awesome and no damage visible!

Definitely going to have to remove the Giants sticker though....

Previous Owner cleaned it up before I got it.

Looks like he took a wire brush to it. The vent also free spins on the rivet.

I need to find a way to fix the warpage then I'll tighten the rivet.

I need to adjust my cook for lower temp since the ribs were a little tough but still juicy and mildly tender.

First cook on my SSP. Enjoyed having the thermometer giving me a general idea on temps.

And the meal was beef and pork ribs, smoked with royal oak lump and mesquite chips.

Tested my thermometer to read approx 25° low.

The double coal baskets were to heat and scrape the old grates.

5 hour smoke then quick high heat for the added sauce.

Beans in the basement of course, ended up with a rich smoke flavor. Went dark side with a chargrill (buddy's neighbor's grill) cook the other day.

10lbs of bone-in pork shoulder

Wife made it (carnitas tacos)    I did the 6 hour cook to make the pork pullable.

Very yummy but had trouble getting a stable temp due to the offset fire box and high winds.

I don't have finished pictures,  way too delicious to stop and take pics.

Pics are from 5 hours in.

Cook process:
Cut and seared in cast iron pan with flavoring
325° covered cook (4hrs) in recipe baste
2hr uncovered,  turn after first hour.

Planned cook for Tuesday.  Having a moral day with my section at work. Here is the plan.

Pulled pork sandwiches, ribs, steaks,  baby potatoes,  broccoli, corn on the cob

18wsm:
Bone in pork shoulder seasoned and seared with copper sj then smoked

3 racks of ribs, thinking bbq style

Copper 22

Everything else,  hoping to get to use my Craycort griddle grates for something.   


I am planning to start around 7am. I have read to allot at least 30 min/lb with the shoulder or more.  I'll likely start the ribs 1-2 hrs later. 

Since my wsm is missing the water pan I will be going with the 14" clay terracotta pan I have read about.

We will see how well I can put together an entire cookout meal. Let me know if anything in this plan sounds incorrect.

The handle is in good condition albeit a little loose.  I have give it a coat of spar.

This kettle also has an added thermometer in the lid.  The install is rough with a jagged bent in hole..... just going to have to embrace the look.

Inside cleaned up pretty well, One note of interest is a few small spots of yellow porcelain inside the kettle and a bit outside, also noticed some lime green as well. I assume this kettle was near some colored kettles before firing.

Thanks for the kind words, tomorrow I start my largest cookout using 3 grills and a smoker to eat Wed.

Also fixed the thumbscrew's top vent. It's not original looking but it works for now.  Eventually I'll grab a better/more original looking screw.

Here is the setup, and some pics of the coal and wood and the shoulder before and during.

Had a high temp problem. All vents closed and still climbing up to 300° 

Got it fixed and steady around 250°

Update

Unfortunately I didn't get any pictures of the shoulder once it was finished.  I couldn't keep the smoker below 270 degrees which was a slight problem.  The 10lb shoulder cooked in 11 hrs (a bit fast for me) and then I had it rest for 4 hours.  The bone fell right out once i tried to pick it up which was nice.  The lower 1/4 of the shoulder was a little dry but the rest was very moist.

During the cook, had a hard time keeping the temps under 250 degrees though.

Here is the full spread once complete.  So cadillac cut ribs, pulled pork sandwiches with red carolina sauce, some rare t-bone steaks, cooked onions, potatos and corn on the cob.

And a plated portion,  The ribs were pull off the bone which was great, but i think I smoked them too long with the sauce on them (stubbs sweet and heat sauce).  Also the end ribs seemed a bit dry for my taste.  Corn was cooked in the husk over lump coal then added butter, salt and pepper.  Steaks were seared over lump then rested; so basically rare.  Potatos were salted, peppered and garlic powder.  The onions were buttered and cooked with Famous Daves steak and poultry powder. Both potatos and onions were cooked in foil pouches.  Also had grilled watermelon but unfortunately the actual watermelon wasn't too great so.... o'well.

Pork was a hit with none left and many seconds grabbed, ribs were the close second.  About 10 Marines showed up and scarfed the food and enjoyed the bbq, so I am proud of that. I had fun and hope to do it again soon.

Cut close and inside to the 1st bone, skip 2nd bone then cut close to inside to the third bone. Leaving a lot of meat on the middle/second bone.

Started with pictured below, mix of lump and briquets. Then added a chimney of lit briquets.

Once the temp got to 200 I started closing the vents until fully closed and the temp still went up. I'm thinking a new vent kit to replace the wavy and bent vents for a tighter fit and less air leaks.

Next time I likely won't use lump either;  I know it runs hot, but I panicked thinking one bag of briquets wasn't enough.

May not need the lump for L&S, but try this next time  ...  based on the charcoal arrangement that you show in the pic above.  Grab about 20-30 right out of the center of the pile leaving a small cone shaped hole in the un-lit remaining.  Get those 20-30 fired up pretty good (since they will shrink in size I usually add a another 10 to them ending up with 30-40) and pour'em right back into the hole from which they came.

Now monitor for 200F and throttle-back as usual.   You can take it from there :)

Your WSM sounds like mine. She's a lovely old gal (mine is) but she's leaky as hell. As a result, the coals get too much oxygen and they burn too quickly, and your run too hot. You need to try to eliminate those leaks. You can "bear hug" the center section trying to bring it in round. There are aftermarket door (Cajun Bandit) and gasket kits which can also help.

Those things take time and $. I am often short on both. :).

So in the interim, I help control the heat by modifying the way I fill the coal bowl. Mine will even run hot with the above mentioned "minion method" (creating a center hole where you drop in the few lot coals). So I use "the snake" with great success. You can google for a picture but what I do is to stack coal inside the ring to line the ring, but not making no a full circle, more like a C shape.  Sporadically along this ring or C, I place a few pieces of wood. Then I place about 10 fully lit coals at one end of my "snake". This will light the coals 1-3 at a time along the snake. Think of it like a fuse.

This has worked really well for me while I plan to resolve the air leak issue. I too can run with every vent closed and if I had a full bowl, I'd be up over 400 degrees.

Also on a windy day, I'll wrap my WSM with a fire blanket to prevent additional air blowing in. It goes without saying it becomes your smoking blanket. :)

I do my startup like SmokenJoe. 20-30 coals taken from the center of the pile and lit. Once fully lit, put them back in the center.  I've found if you start with too many lit coals it's hard to dial back.

   Thought that was an 18" couldn't really tell from the two pix they showed, lovely color but I couldnt get past those gangly giraffe taco handles. Aside from the charcoal rails what other accessories came with it.

Great grab on this one.  I think it deserves its own thread.  Is it Wedgewood Blue or Blue Wave?  Either way the depth of that color is amazing.

I've thinned the herd a bit to make my upcoming move more reasonable. The copper 22 went away; I was not impressed with the push button legs and their loose fit; also the newer copper color lacked depth compared to the old target kettles or the u-line joes. 

The chill, WSM 18 and the CGA are going to my buddy who is eager to expand his Weber collection.  I have officially turned him after getting him an 88' birth year redhead. 

Below are the few I will keep until I have opportunities for other acquisitions. Not pictured is the Redhead SSP living at my mother in-laws in her garage. 

I seem to prefer the older grills for their style, look and fit/finish.

This kettle was purchased in Belgium and brought back to the states a few years later when the owner came back state side.

Neil actually turned me onto it. Was advertised as a 22. Looked small, but I hoped. In the end, I now have an 18" euro mode blue purchased in Belgium.

I dropped my lid, I'm pretty upset. Thinking a wire stich repair with epoxy.

Looks like just the wood handle took a hit. Any dents on the lid or rim? Lose any of that faded porcelain?  If it's just the wood, order a new handle from Brian.

I'm going to try to repair the handle. It's too good looking as a weathered warrior to put a shiny handle on it. And just the wood got any "damage" tiny knicks in the finish; but nothing you can see on it without searching for it.

Overall a great enjoyable cook.

Cajun dry rub wings and Jamaican jerk wings with grilled broccoli and cauliflower and a good ole crawfish boil.

A very enjoyable meal with the wife and a couple friends.

I didn't get a picture of the sprouts on the grill. I just used a grill basket and tossed them around every now and then.

Cooked up a shoulder for pulled pork. I've gone sophisticated and got myself the Weber iGrill 2. Slept like a baby as my grill chugged away at the cook.

Wrapped up and waiting. Used Gulden's brown mustard and a dry rub with brown sugar, Kona coffee and other rub ingredients.

Made a sweet dry rub with a kick. Used brown sugar, maple sugar, cumin, paprika, ground mustard, cayenne, black pepper, garlic powder, salt and chile powder.

Positive reviews all around. Now ready to do some cooking on my new MBH.

Today I may be getting my first gasser. Finally found a Weber I'd like to have for quick weeknight cooks that's not too far away. Owner says it's in rough shape but we will see. The hardest part will be taking it apart to fit in my little Veloster if I do pick it up.
