Right after I added the pic of the ribs getting foiled, guests started showing up. I wish I would have gotten a few pics of the plated food, but was just too distracted, oh well. I had a look in the fridge this morning and there are only a couple rib bones leftover.

After resting, it pulled easily. Not a pronounced smoke ring as I did not use a lot of salt.
I was experimenting, so I didn't go with a rub. Just S&P and a generous amount of brown sugar .... Made for some delicious bark.

Had a quick lunch of two kettle pizzas before starting our Independence Day adventure.
I tried something new this time, taking foil and wrapping a grill grate with foil to simulate a baking steel.

Happy 4th of July, Everyone! Just sitting here waiting for the rain to stop long enough so I can get my entry on the grill. Going with a small buffalo ribeye tonight so it shouldn't take all that long. Sure glad I decided to try my first pork shoulder on Sunday instead of today!

Welp........
Got some stuff done on Day Two & took it to work......snarfed up quickly by all the crew.....
I did terrible at the job for the last half of the day & came home beat to a pulp......
Took all day yesterday to recuperate & started fixing stuff early this AM to have a rotating grill up / smoke up all day today......got one tri-tip injected & running very low at 6:30 & the wife wants to go to Denny's for breakfast (does this all the time, the whole bunch over there knows her by name)
I say i need to finish getting the rest of the stuff ready & then maybe I'll go.....that happens, hop in the shower & she goes out the door first while I'm getting the dawgs in & locking the back....
She comes flying back in like there's a nuclear bomb went off in the front yard & after a minute of shaking & stuttering & get her to tell me what's up...the cat got run over & is out by the street....
Somebody (maybe the new neighbors) was nice enough to drag him out of the middle of the street & cover him up, so we spent the next 1-1/2 hrs. finding a place to drop him off.....hardly anybody's open on the 4th.....
Her Dad died last week & now her Lou-Lou....pretty tore up & so am I.....he steered clear of the dawgs the time they have been here, so I became more his buddy as he stayed out in the garage, driveway & carport & was very smart about going near cars or the street....must have just been too old & slow at 13 years......
He's even got a Weber named after him, the one the wife had to get rid of from her apartment before we were married....

Here's the tri-tip at about 2/3 of the ring of coals burnt, running at 200~220 with a few 250 spikes.....thin parts temp @200+ so it should be pullable in an hour or so....

Split and soaked a red cedar cooking plank into staves to use to bind the fillet to the spit after a 4 hour brine , smoked for 3 hours at 200 until around 150 degrees , let it smoke in the open for dramatic flair :). Sausage , spuds , pea salad and more food then a man can eat ....

Great day! Great cooks from everyone and I really enjoyed being a part of this event. As I was taking pictures of the grill I was explaining to everyone about this event and it was cool to think that at the exact same time somewhere someone was doing exactly what I was doing. To everyone in the WKC - thanks for being awesome and loving kettles as much as I do - it makes me feel almost normal.
The party cook...
36 - 80/20 burgers w/sharp cheddar, 24 Hebrew National hot dogs, 12 beer Brats, 4 jalapeño cheddar burgers, 4 black bean veggie burgers, and 2 crab cakes. 48 people came to the house we even started feeding the neighbors that happened to be passing by. Great 4th and I wish I could do it again tomorrow...wait can I?

Tried a reverse sear after the temp on the maverick said 140, should have set the thing to rare, absolutely no red in the center, but my wife said she enjoyed it so it wasn't a total loss. Not pictured were baby red potatoes that were tossed with duck fat. They were cooked in the oven while it was still raining out.
Here's my cookup for July 4th. Just close family this year, not a housefull like some of ya, but still was a great time.
I started out with a variant of ABT's. This was inspired by a family recipe we call "good bread" - it's a simple thing you make with canned biscuits. Dip them in butter, roll them in a mixture of grated parmesan cheese, diced green peppers, diced onions, and crumble bacon. Line them standing up side by side in a loaf pan & bake 'til the biscuits are done. (it takes 2 whole cans of biscuits to make 1 loaf),
Anyway, the good bread inspired me to make peppers. I started out with sweet peppers, cleaned out the stems & seeds, and a super thick slice of onion, right out of the middle.

Took 2 tablespoons of butter, and with the back of a spoon, I mixed in as much parmesan cheese as i could get mixed into the butter.

I am getting in my pics from the 4th a little late. I am at my inlaws with a weber OTS and an old portable kitchen to use. I smoked some ribs on the 3rd, some dogs and sausage for lunch on the 4th, and pulled pork for dinner.

The reunion was a great success, it was fun to cook and make new family memories. Not pictures was the drumsticks on the yellow.

I forgot. The Wood Dale red served as the "warmer" for the burgers and dogs and chicken. Everyone loved the food, were blown away by seeing so many kettles (they saw my garage too) My cousin mentioned that with the food being as good as it was, it justifies my owning so many grills.

Here they are right after putting them on the grill. I had a mix of hickory and apple chunks sitting on top of my charcoal snake to provide that yummy smoke. That's some trimmings on there with the ribs. I was fixing some beans, and I was going to cook the trimmings and chop it up to add to the beans.

In honor of the Forth I decided to use a fuse with two small chunks of maple for flavor.

The guest's of honor, rack on top is dressed in Big Dick's Rib Rub and
the bottom rack is fitted out in Big Dick's Big Kahuna Rub
(think pineapple & orange hints with light heat) which has a nice light golden yellow color.

Temps slowly crept up to 270 over two and a half hours, then into foil for an hour with a
touch more of the correct rub for each rack with about about 2 ounces pure apple juice.

I should have swapped bigger rack closer to the heat as it was a bit much for the
small rack because it just tore in half while moving back to re set the bark.

But it was great served with a fresh made macaroni salad and drip beans..
I know I'm late to the game but here is what I smoked on the 4th. I used my standard rub on the pork shoulder and Weber's Kickin Chicken rub on the chicken halves.

@1buckie! It was an interesting overnight smoke. I learned to always DOUBLE check the bottom air vents to make sure they are open ;)

We had a family get together. Not sure if I'm going to have time for competition this year. I will say that is always a friendly competition between me and my niece when I do BBQ. I love teaching her everything I know cause then she thinks she can do it better! LOL!
