Mostly for some extra space, put one or two more ribs there when there’s more than me and the wife. Do rotate the ribs if you do this, it’s slightly warmer upstairs 😎
Last time I put some ribs on it while the pulled pork finished, hot and fast above the charcoal, be sure to flip often. Memphis dust ribs are an ok entree for some texas bbq pulled pork. Imho of course.
