I don't clean or switch grates. Just preheat that sum bitch until the smoke runs clean and you're good to go

If you're getting carryover it's not getting hot enough at start up

^^This^^

I ALWAYS get my kettles screaming hot at startup. Wire brush the grates and good to go. Never had any "carryover" flavors...
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Partially due to family dietary restrictions and preferences, and partially due to weberitis   8)  there is no issues with this.

Grills for chicken/veggies don't see pork/beef.

Grills for pork/beef don't see chicken/veggies.

Smoker doesn't see chicken/veggies (other than ABTs).

Gasser doesn't see pork/beef.

I usually scrape the grates after the cook, and then again once warmed up for next cook.

Dude, relax your chicken.

I have been using my performer so much last few weeks I haven't been giving it a good clean like I normally do. Dumped hot lump coals.... grease fire ... lol. It didn't have a choice but to get clean after that ..
It's good to clean here and there and knock the crud off the grates .

I'll definitely be pre-heating the grill longer/hotter from now on.  It's an easy and obviously effective solution!
Wife: Let me guess... you want to grill again

UPDATE

Everyone's advice worked beautifully! Pre cook inferno followed by great grilling with no carryover. Thx all!

....the second grill purchase has been put on hold tho....
