@bamakettles , I used a firedial right over the coals and it did it's job. No fire flare ups while cooking. When I swapped butts (top to bottom) due to heat difference about 100 degrees hotter in bottoms than top, had lid and side door open, I did get a flare up, after getting all back together took about 3 minutes for thick smoke to clear and back to cooking and temps about 300. Hope that makes sense. I love the FireDial on the kettles, in my top 3 list of best kettle accessories.

Solid plan.... I've got a firedial I used to use in my WSM, hasn't seen the light of day in a couple years.  Might be of use with this method!  Thanks for sharing!

Just a lil steak planned for Saturday evening. Grandson decided he'd join us after football, said he'd like to try grilled shrimp. Here we go. Getting a good sear, now off the heat, add the shrimp, let's eat. He loved it, he's coming around to being a good eater with an appetite.
