2x 10 lbs pork shoulder. These guys will stay in the WSM for 22 hrs to be continued..............

...and 22,5 h later. WSM was running all the time in 190-210f range. I didn't lift the lid even for a second and also didn't add any fuel. What's really interesting, there is still enough charcoal for 6-8 h

Got this on about 1.......pulled it off about 3.
Pork Sirloin Roast
Cowboy briquettes & some cherry wood.
240-250 temps.
Cooked to IT 142.
Currently resting and about to get ate.

Ready.......
