I do them both ways and sometimes I trim a lot of it off. Today I left it on and just scored it. I was thinking about flipping these about halfway through.

I just recently started doing fat side down the whole time and I've been very happy with the bark on the meat side. I've also tried flipping half way. They turn out good no matter what. I'm always changing / tweaking my method just for fun.

I've been doing fat side down on brisket too.
