Big ribeye!
« on: August 31, 2018, 05:49:29 PM »
Tried something new tonight.   I had a 24 oz bone in ribeye saved in the freezer since the Fourth of July.   Our Meijer had them on sale with fancy Frenched bones.  I was waiting for a good occasion to cook it.

I was interested by some videos comparing the pit barrel cooker to the WSM, so I decided after watching a Kosmo Q video with a pbc to cook my steak on the WSM without the water pan.

A half chimney of royal oak lump with a half chimney of lit to lump gave me 350 at the grate.  The steak took about an hour.  No wood for smoke.   Just beef fat dripping.  [emoji16]Steak was rubbed with my homemade bbq rub.  Pulled at 127 f.  Possibly the best steak I’ve ever eaten.

Any time you cook a steak like that is a special occasion in my opinion...

And you did it justice...

No.  The direct heat, albeit 2 feet, had good texture.   Not quite the same as high heat.   I would not do this with a thin steak.

I went to dinner for work 2 weeks ago. The other company was paying I got a 8oz filet mignon for 50.00 and it didn’t look that good! Next time I’ll bring them to you and you cook it. 3 of us with drinks, soup, salad, and appetizers almoust 300.00 with tip. I’ll take a backyard bbq anytime over that!
Wife said "No more GRILLS in this house!" So I bought a 2nd house!
