Finally nice weather in central IL . Pork butt time !

Started today's cook at about 5:30am with a 8.5 Lb pork butt that I let sit over night with my rub on it . Used the snake method . Always have had good results with it. A total of about 13 hours at 225-250 degrees . It was a tad windy as usual here in Illinois. Just a good low and slow . Now it's wrapped and resting . Here's a few pics of my cook throughout the day.  I'll post more of the butt when it's ready to be pulled.

Bone pulled out clean . Very nice flavor . I'm happy
With it . Now I got enough pulled pork to last ..... a couple days
