The common method is 3/2/1. Anything over a hour wrapped for me is way too much. 45 minutes to a hour is perfect. Gives you more Cooking time back out of the foil to tighten back the bark and tack the sauce. This is just from my experiences though.  Definitely give it a try. Like them wrapped and unwrapped
