I started this cook on my Performer, but had a fire that was moving too fast and hot. So, I moved the coals to my 26 and got things under control. I used some Weber briquettes, with peach and cherry wood for flavor. The ribs were dusted with Stubb's  "Bar-B-Q" rub.

About 4-hours in, the ribs were pretty much done at this point and very tender. I was cooking at about 275*.

I needed to give my daughter, Emily, a serving before she went to work. Emily had hers without the sauce. I had a sample too...

I brushed on some Stubb's "Honey Pecan"  BBQ Sauce after I cut a few ribs off the rack.

This is about 4.5-hours or so into the cook.

Nothing too fancy tonight. Just the ribs and a bagged salad, which was pretty darn good too.

My kind of ribs! Stubbs and peach wood. I bet they were wonderful.

Yummy!  My perfect type of ribs. Not over done and yet simply delicious.

The ribs look great. Did you wrap them at all?

I've never seen baby backs that meaty. Where did you find them?

May The Smoke Be With You!

Jason

@pbe gummi bear  Yes, I wrapped for about 30-minutes, in order to speed up the cook. My daughter insisted she have some before work.

@stev  These were "Farmer John" brand ribs (most common in the grocery stores around here) I inspect all that are available in the case, to find the best to my liking.

Thanks for the positive feedback!
