Coshell snake test on Cajun bandit
« on: May 08, 2016, 02:20:33 PM »
Making ribs for mother's day
Decided to try a coshell snake instead a typical Kingsford minion.

Normally a kblue snake in a kettle will hold 225 for several hours,  but it's not enough to bring a 22" wsm or bandit up to temps.

Let's see what coshell can do!

I lit one end with a starter cube.  30 minutes later the pit probe hit 200.

Ribs went on and sat in peach smoke for 2.5 hours.

Temp was 300 here.

Now they're foiled for 2 hours.

Looking great! Is there a deflector/water pan in the stacker?

There's a water pan, but i'm not using it for this cook. It's still loaded with pork fat from a couple weeks ago. WHOOPS

What is coshell? So there's no deflector in the setup? Looks good man.

Coshell is charcoal made from extruded coconut shells. Amazing stuff.

No diffuser today.  Heat is several feet away.

Is that like an Amazon find. I'm in Il. I don't believe I've ever seen that here. In fact, I never heard of it until this site.

I can't tell you how many times I open my WSM and say just that. After I shut it down I'm too busy eating to worry about cleaning out the pan and then I'm in a food coma, so it's too late.

I like Coshell but it doesn't impart any flavor so you have to use wood if you're wanting smoke flavoring. The Coshell on its own burns clean.
