 What ?  (says Bruno)

Here we go.....

It's the Big Dawg......loaded up......
Except those two sideways ones in the front row are going to be a problem......

Pre-staged, sitting on top of a spare Redhead...........60 on the bottom including the big ones & 94 little ones on the top deck........

Thanks to Mike Stavilund for reminding me that you can use a Corn 'n' Tater ring for an upper deck.....

Not having a flip-up makes this a calculated risk in "how much" to load up & I went just a bit overboard thinking the wood shread would slow the burn enough.....

It started to work fine, but as the wood burned down, the temp began to go up a bit & the bacon grease from the ones in front caught just enough of the coals to fire up pretty good.....

Deep fried......

Burned a few, most of them made it OK.....plenty to go around during the college game for appetizers.....

Ladies and gentlemen, history has been made:  I actually taught Buckie something (okay, I know I only *reminded* him of something he already knew, but I'll take my victories where I can).

@jd
That one ran about 1:15 or thereabouts, but I pulled stuff off way before the coals were finished....
Like said, the 'Turds up front dripped grease & then it dripped down into the center of the kettle & began to burn if the lid was open.....
Kind of a foul ball......you can see some of them needed to be moved & in the pans, some didn't get good & done on the bottom.....

A normal run on these, on a 22", looks something like this:

Lightly dampened shread, pretty good coal pack & it will run for 2~2-1/2 hours @ about 235~245......

It's a conrtolled burn, with the smoke filtering up thru the damp shread to mellow it.....if it works out well, produces a real nice, smooth smoke flavor in the product....... ;D

I really like your chimney holder. Is the post welded? Or how did you attach to the steel tray?
