That is an awesome looking Dutch baby,  I have made them before but none look as good as that.

Also - your writing is great!

I believe it's the interaction of the hot cast iron and batter that causes the dramatic rise that you see in the pancake. So to answer your question I'd say it's not likely that you get that reaction with other bakeware but I can't rule it out either.
