I brined some steaks in salt water and rub, rubbed them with some garlic and herb, then cooked them low and slow for a cpl hours, wrapped them in foil for an hour, then finshed them unwrapped for about 45 minutes or so.  Tender and Yummie!

the foil wrap in the middle really makes 'em tenderize......
