One thing I have never attemted is pork ribs. I thought it was about time I tried.
I had 5 racks to do, (I never do shit by halves) for my family of 4. So I rubbed them down with various rubs and rolled them so they would all fit in the kettle.
I had the kettle fired up as I put the ribs aside to come up to room temp, and then set them in there with some plum wood to smoke away. And in the mean time, I had some corn brining in it's husks for a few hours while waiting for the ribs.
After the ribs had shrunk a little, I unrolled them and let them get a full serving of smoke. In hindsight I probably didn't need to roll them. Oh well.....
At about 5.5 hours I prepped a second kettle and got the corn and turds going on a low and slow.
And shortly after is when I started saucing the ribs.
About an hour and a half, or thereabouts, we were ready to rock and roll. I took the ribs and turds of, and left the corn on for a little longer on direct to get a bit of colour.
I carved up the ribs and served them with a simple home made slaw using yoghurt instead of mayo for a slightly healthier choice.
We ate well last night! I hope you enjoy.
