I just had my first big cook on the Ranch last Sunday. Did 60 burgers and 64 hotdogs. I used two heaping chimneys of charcoal and dumped it on the back half of the charcoal grate. Seared about 20 to 25 burgers on the direct side, would spin the grate around to indirect to flip or cook indirect. If a few looked a little not done I threw them back on direct. Hot dogs only took a few minutes and if you cook a lot of them putting them on the grates to where they roll easy works best. I had enough heat to do 3 runs of burgers and the hotdogs but you could always add coal ontop of lit to keep it going. I purchased two of these ash rakes that have hooks for grates to spin the grate. You could get by with just one if you don't have a heavy load on the grate.

Some tips I would have for easy clean up would be to bring a metal bucket to throw still burning ash or spent ash into so the grill can cool down to clean out. It is really hard to do without pulling the grates. If they are still warm a good set of grill gloves or welding gloves is really helpful. If you want to make clean up easy you could try a pan or foil on the indirect side of the charcoal grate and also on the ash pan. It is crazy just how much uncooked fat accumulates. On the direct side it just burns off.
I recently got some wood handles for mine and can't wait to get them set up right with the modded metal straps.
