Mexican Fiesta

I have been doing Mexican food lately, but haven't taken the time to post. Whenever I get into the Mexican food I always have a bunch of stuff left over and have to keep making similar things for several days.

 Here's another shot of the shrimp tostadas from Labor Day. I didn't get a picture, but I also did some chicken tostadas that looked about like this.



I used some more leftover chicken and mixed in some onions and pinto beans to make a filling.



Then I wrapped up some burritos with monterey jack and baked them.



Here's a close up.



Dressed with homeade avacado sauce, orange sauce and cilantro with a little more MJ on top.



This one has a little red sauce on it.



The next day it was ground beef tacos with pintos mixed in. I really like how everything comes out with the pintos added and it also stretches everything. Notice I like to overload everything. I just keep a fork handy. ;)



Then on Saturday morning it was chorizo and egg burritos.

Good looking eats!  I'm a big overloader too.  Sometimes the best part is eating what falls off!
