Hawg and briskie are on.

110lb pig and 8lb brisket are on. We will let them cook all night and check first thing in the morning. I love doing this. My favorite holiday is labor/pig roast day.

Dude, that's awesome.  Happy holiday!

When I went to pick up my SS from Peas, I was driving all through his neighborhood, intently looking for the right house number.  Then I kinda laughed out loud when I realized that his house must be the one with the trailer-sized smoker parked right in front. 

If he's a Pea, his wife must be a peach.

It turned out great. We do 2 or 3 pigs a year and the Labor Day one is always my favorite. It took about 19 hours for the pig, 16 hours for the brisket and 7 hours for the chickens. They all turned put great and there wasn't a hungry person there. We fed about 100 people give or take and there is probably 15 to 20 pounds of pork left. It's a bit of work leading up to the party but it is well worth it. Great friends and great food!!
