I used the roti ring to raise the cook grate on the performer.  cooked direct over the cools with some apple wood.  Painted red with the classic.  Best corn syrup red dye sauce on the market

Looks awesome!  We've got a couple of pork steaks in the freezer that we're planning on grilling soon.  Appreciate the inspiration!
