Bought these at Publix over the weekend for around $11 and froze them.  Couldn't wait to try them, so I oiled them up, seasoned and put them in the bath - still frozen - at 130F at lunchtime yesterday for an evening cook.  After baking the potatoes, they were in the water for about 5 hours.  I seared them one minute per side in the fire, then repeated for another minute per side.  I should have done 30 seconds per side as they were a little over but still pinkish inside.  They were super tender and the fat rendered wonderfully... Twas a beautiful evening for grilling, about 68F out with a beautiful sunset.

Those look really good. Nice, simple salad, tater, toast along with it.

I've only ever seen them as whole roasts, not pre-cut steaks.  I've done 2 of them and the 2nd one seemed a little tough.  Not giving up on the cut, though.
