Chicken Cordon Bleu and Twice Baked Potatoes on Marilyn

Deboned / skin on chicken thighs seasoned with Blues Hog High Flyin seasoning cooked indirect at 350F to 170F and topped with Boars Head Tavern Ham and two slices of Baby Swiss.  We had a leftover baked potato from Sunday night so I cut it in half, scooped out the insides and mixed it up with sour cream, cheddar cheese and seasoned with Meat Church Blanco seasoning.  These also cooked indirect on the 26" for the same amount of time as the thighs.  I topped them with more grated cheddar when I added the ham and cheese to the chicken.  Tossed salad for sides, and I took extra plating pics to capture the Malibu sauce and salad.  This is a really nice weeknight dinner, highly recommended....
