Rotisserie Duck

Here are some pictures of the rotisserie duck I cooked on Friday.  There was a PC Points special on poultry at Fortinos so I stocked up on chicken and also bought a fresh duck since ducks are poultry.  Between regular chicken, halal chicken, and the duck, I thought for sure that I was going to end up having to argue for parts of it to be included in the special which was pretty broadly defined as "fresh poultry" of "all sizes and variety" but it all rang up correctly.

The duck got pricked all over and a good salt + pepper + garlic covering.  The sweet potatoes were tossed in olive oil and Cluck and Squeal Bold Browning rub and then roasted in an enamelled cast iron baking dish.  Garlic bread and steamed broccoli rounded out the meal.

Of the chicken that remains, two packages of halal thighs are going to be going on the ranch for a late night barbecue when one of my friends gets back from work.

That roti poultry looks excellent!  I’ve never had duck but need too. Big portions!

Looks delish! Gives me a choice idea of Turducken for Thanksgiving this year.
