Good evening, and hello from Alberta!  Big fan of Webers here, just picked up a Performer Deluxe about a month ago so that I could take time to refurbish my 13-yo One-Touch kettle. Already into the Slow 'N Sear; broke in the new hotness with some Alberta Chuck burgers, and have done some successful short ribs and a butter-soft brisket on it.  Always wafting charcoal.
