Ok...here is the recipe along with a couple photos.
We always (ALWAYS!) put a pan of beans under whatever we are smoking, ribs, pork shoulder, chuck roast, etc. All of our guests rave over these.
You can modify the recipe as you like, but here is the base info for starters:
6-8 strips of bacon, cut into 1/2" squares
1/2 medium onion, diced
1/2 bell pepper, diced
1 - 2 jalapeno peppers, seeded / diced
1 can pineapple chunks, drained
55 - 60 ounces of your favorite canned baked beans
1 cup brown sugar - packed
1 cup ketchup
1/4 cup mustard
3/4 teaspoon salt
1 tablespoon fresh ground pepper
Saute bacon in a skillet until crispy, and remove.
Saute onion, and peppers in the bacon grease until tender.
In a large mixing bowl, combine all other ingredients. Stir in bacon, peppers, onions, and pineapple. Pour into a 12X9 aluminum baking pan. If it looks dry, add some more ketchup.
Position the beans in the kettle under your meat, and allow to smoke for 2 1/2 to 3 hours.
