So I’ve been looking at these for awhile. Going to give it a try. I have it dry brining in kosher salt overnight. Going to cook them like I do TriTip. Indirect. Wish me luck, and I’ll post more pics as the cooking goes.

As Paul Harvey used to say...and now you know the rest of the story, ki dog picture heavy. To much salt. IMO, was a little bland. Hit it with some thrown together chimichurri concoction. That made a huge difference. It was pretty good with that stuff.
