BBQ beast in the northeast

Hello. Quick background I have been doing barbeque and smoking for about 15 years and grilling for 20 years in the northeast US. My buddy that got me into it,  just gave me his Weber performer that he had when we met. This makes this kettle extra special to me. I got into this because I love the taste of food using these ancient techniques of cooking. Steven Rachlien is my BBQ idol. I hope to contribute to the site and learn from everyone here!
