Dang, I've been doing it backwards all this thyme! Cooked them on the cooler side of coals, then a last minute sear... It works for me. I'll definitely try this method next... if I can ever find beef around here...

Try it out, I think it's the best way to do it. The only thing I do different is salt, pepper and garlic about an hour before. Then pat the moisture dry before grilling. Good crust and good flavor.
