One of my steak methods for 26

These were a couple New York strips from Costco. Excellent looking cuts for choice.

I spread some coals out on half the grate. Let the grill get good and hot then cooked direct with lid cracked. I didn’t keep track but probably flipped 5 times letting them go a minute or two between. I let these get a little overdone for my liking but they were still juicy and tender. Just kosher salt and pepper and I dusted mine with a little fresh made jalapeño powder. I’ve been really liking this method lately. The lid cracked keeps a nice low rolling flame but keeps it in check.
