I've never done hot and fast ribs before but I've heard good things. Pecan is my favorite, works with everything. Looks like they came out great! And white looks good as always.

I came from  a hot & fast smoking background  in a day and age when it was totally frowned upon.   Transitioned to low & slow for a few years since it was "the right thing to do". Rarely do low & slow nowadays.

Same except I didn't even know it was frowned upon I knew so little.

By the way, I'm not sure this qualifies as hot and fast.

Looks great!  Just hung some ribs yesterday at a party. 3 hours at 325ish. I consider this medium heat.

Usually cook it at 350 375F but was in and out of the house so had to dial it back a bit.

Very impressive - love this DIY setup! The results look outstanding! Love the stainless look with the bolts and the temp gauges. Perfect temp control too. Just wow....
