Brisket 2.5 kg on WSM

2.5 kg Rolled Beef Brisket
Weber rub with mustard
2.5 hours into cooking. Internal temperature now 61C
I intend taking it out at approximately 75C internal temp which will be approximately 4.5 hours cooking time
Put into a roasting on some beer covered in foil and back in until the internal temperature reaches around 94C.
Finally let it rest for around 30 mins! Everything crossed! [emoji23] LoL
Update.. took it out at when internal temp reached 76C. Put it in a roasting pan filled with a bottle of beer (Budweiser as that’s all I had but any beer would do) or a foil pan. Back in the WSM for approx 3 hours or until internal temp reaches between 91C to 95C. That’s it!
Our guest enjoyed it and so did I. One final tip I’d like to add is that you should let it rest for at least 30 mins or more which would then give you a more juicy meat! Sadly I didn’t but it was still delicious.
Total time approximately 9 hours! Happy grilling folks.

Looking good, What type of beer? With the weight and temp conversions, I started to try and convert the time too! Haha
I swear, when I score a great deal on a 26" I'll stop buying grills... So often.
